The Many Blessings of Homeschooling
Wait what? Homeschooling? But this is suppose to be a recipe. And yes, it still is! Thanks to our homeschool curriculum, on occasion we enjoy creating family fun and delicious recipes all under the guise of world culture imbedded cleverly in language arts lessons. In this exercise, we indulged in a taste of Italy, literally.
The Good & The Beautiful curriculum focuses on incorporating culture, geography, art and history into it’s core subjects of language arts and math. Toward the end of summer last year, my daughter enjoyed discovering Italy through her language arts lessons. Not only did she delve into vocabulary, sentence structure, and writing lessons, but also learned about Italy’s culture, geography and art. She studied Italian paintings depicting the alluring urban in contrast to sweeping countryside landscapes, and was even tasked with multiple pastel art projects. Finally, as the Italian lessons’ grand finale, making home made gnocchi sealed the deal that learning is absolutely fun.
Whether you are homeschooling your kids, they are attending school, or you just want to have fun with friends and family, this is a great way to bond.
This gnocchi recipe turned out so well, we have enjoyed making it with family and friends on numerous occasions. It’s a fun way to help children learn how to make clean food from scratch and great way to spend quality time together.
Homemade Gnocchi Ingredients:
1 Egg
1/2 Tsp Salt
1 Tbsp Butter - Softened
1/2 Cup Mashed Potatoes
1/2 Cup Ricotta Cheese or Cottage Cheese
1 1/2 Cup Flour
Note - If you want to eat as healthy as possible, buy and eat organic. I source as much as possible organic, GMO free, and now additionally for meat and dairy, MRNA free. I obsessively read labels and source food from companies like Azure Standard who are equally focused on enjoying food that is clean and healthy.
As older parents in our 50’s wanting to stay agile with our 8 year old daughter, we moderate our consumption of grains, avoid cereals, enjoy homemade sourdough breads on occasion, focus on eating raw fruit and vegetables, consuming ample clean protein, and deepening our nutrition with innovative longevity supplements. Our family all works and studies at home, which means we make most meals from scratch, nothing fancy, just simple and healthy.
Directions:
Blend Egg, Salt, Butter, and Ricotta or Cottage Cheese in a large mixing bowl.
Add Mashed Potatoes and Flour. Stir until a ball of dough forms. This is a great moment for the kids to get in there, with clean hands of course, and enjoy the tactile experience of mushing the ingredients together until they are well mixed.
Knead the dough on a floured flat and smooth surface. Add a splash of water if the mixture feels to dry, or a sprinkle of flour if too wet.
Separate and roll the dough into four smaller evenly sized balls. Again, all of this work is a blast for kids who love tactile experiences similar to play dough.
Roll out each ball into a thick rope.
Cut each rope into 1/2 inch pieces… approximately. This is where my daughter had a ton of fun creating various sizes. It took effort for me to let go of trying to make them picture perfect. It was worth it to see how much fun she had in the process. Just try to avoid pieces getting too big.
Adults - Bring water to a boil with a pinch of salt in a large pot.
Adults - Carefully place the gnocchi into the boiling water. I found using a slotted or holed ladle to sink the gnocchi into the water worked well. Sometimes we’ve made a double batch to feed more people. This process may be a bit slow and steady, but the gnocchi will rise to the surface when it is ready so you can be placing some into the pot while scooping some out.
The gnocchi is ready! Add your favorite sauce. Ours is either bolognese sauce with clean and delicious Butcher Box ground sirloin or basil pesto and shower with parmesan.
